Jamaican Jerk Seasoning

Total Time: 15 minutes Servings: 15-20

Ingredients:

  • 2 tablespoon dried chopped onion (cebolla picada)

  • 2 teaspoons dried basil

  • 1 teaspoon ground allspice

  • 1/4 teaspoon black pepper

  • 1 teaspoon ground cinnamon

  • 1/8 teaspoon cayenne pepper (optional if you like spice)

  • 1 teaspoon salt

Directions:

  1. Mix all ingredients

  2. Store in a 4 oz mason jar and keep in a dry place for up to 3 months

Serve with chicken, fish or beef as a dry rub over cauliflower rice or ½ cup cooked quinoa or ½ cup of a blend of cooked basmati rice and brown or wild rice

Thai Spiced Blend

Total Time: 10 min             Servings = 20

Ingredients:

  • 2 tbsp. garlic powder

  • 2 tbsp. onion powder

  • 1 tbsp. ground ginger

  • 1 tbsp. paprika

  • 1 tbsp. dried basil

  • 2 tsp. dried lemon zest

  • 2 tsp dried lemongrass or lemon zest

  • ½ tsp ground coriander

  • 1/8 tsp cayenne pepper

  • 1/8 tsp ground black pepper

  • 1 tsp salt

  1. In a blender or spice grinder combine all ingredients.  Blend to a fine powder.  Transfer to an airtight, plastic free container and store in a cool, dry place up to 6 months

Uses:

-Add to a vegetable stir-fry and top with fresh cilantro

-Sprinkle over a salad of chopped green papaya and bean sprouts

-Season streamed vegetables served with ½ cup cooked brown rice or quinoa

-Mix with peanut butter, tamari, vinegar, and water for a quick peanut sauce

Indian Spiced Blend

Total Time: 10 min   Servings: 20


  • 2 tbsp garlic powder

  • 2 tbsp ground coriander

  • 1 tbsp ground cumin

  • 1 tbsp ground ginger

  • 1 tbsp paprika

  • 1 tbsp dried cilantro

  • 1 tbsp dried mango powder or lemon zest

  • 2 tsp ground turmeric

  • ¼ tsp cayenne pepper (optional for hotness)

  • 1/8 tsp ground white or black pepper

  • Optional: 1 ¼ tsp salt


  1. In a blender or spice grinder combine all ingredients.  Blend to a fine powder.  Transfer to a airtight, plastic free container and store in a cool, dry place up to 6 months

Uses:

-Stir in lentils as they cook

-Sprinkle over chickpeas before roasting

-Season cooked quinoa, brown rice and/or vegetables

-Add to home-made vegetable soup or stew

Keto Blueberry Compote

Total time = 1 hr. 15 min Cooking Time = 10 minutes Prep Time = 5 min Waiting Time = 1 hour


Ingredients:

  • 2 cups frozen blueberries

  • 2 tbsp chia seeds

  • 3 tbsp Monk fruit sweetener

  • ½ lemon squeezed juice(1-2 tbsp)


Directions:

  1. Cook blueberries in a saucepan over medium heat for about 5 minutes.

  2. Stir in the lemon juice and monk fruit sweetener. Mash it to desired consistency (chunky or smooth).

  3.  Cook for 5 more minutes, remove from heat and stir in the chia seeds. Let stand until it begins to thicken, adding water if needed to thin out if desired.

  4. Allow to cool to room temperature and store in an airtight container (fridge = up to 1 week; freezer = up to 3 months)
